THE COMPANY
Colli di Serrapetrona farm was founded with the aim to implement a unique project to rediscover still Vernaccia wine, obtained from an autochthonous vine. The wines produced are the result of an initiative that aimed to promote the territory and its history and to rediscover its traditions. |

The oenologist, Federico Giotto, a young and enthusiastic expert, led this research and studied the vines and wine-making processes.
|
| The objective of the Colli di Serrapetrona farm is to bring still Vernaccia back to life, to rediscover the traditions connected to it and to recover its links with the territory, by calling on the wealth and flavours of autochthonous varieties that risked being lost for ever. |

PRODUCTION
The farm’s vineyards stand in a wonderful, unspoilt area surrounding the small village of Serrapetrona, in the Province of Macerata. Excellent wine-growing methods and meticulous care of the vines are the key elements for obtaining special products that offer intense flavours, fragrances and sensations.

SERRAROSA

Blend: 100% Vernaccia Nera, grown in our vineyard in Serrapetrona.
Fermentation time: 5 months in stainless steel.
Alcohol: 12,5% vol.
Color: cherry red with intense purple reflexes.
Smell: fresh and pleasant at the first smelling, with wild rose and currant floral notes. Cherry and wood strawberry notes come out to complete its very pleasant smelling sensation.
Taste: a very intense and youngish wine, in which intensity is perfectly blended with its acid structure. The fresh and fruity taste reflects the smelling sensations. Its very good persistence ends with a light mineral taste, due to minerals which are typical of these lands.
Serving temperature: 10-12°C
Suggested dish-matching: seafood hors d’oeuvre, pasta with vegetables.
Suggested glass: Riedel serie Ouverture: Red Wine 408/00. |

COLLEQUANTO
serrapetrona doc
Blend: 95% Vernaccia Nera, grown in our vineyard in
Serrapetrona, 5% Merlot.
Fermentation time: 10 months in stainless steel,
2 months in bottle.
Alcohol: 12,5% vol.
Color: intense ruby red.
Smell: the red fruit flavour explodes with pleasant green notes. Plum, red and black berry notes can be distinguished along with a bay leaf sensation and mulberry.
Taste: more elegant than concentrated. Acidity is balanced.
The fruit and the unique flavours of the Vernaccia are balanced by the texture of the little part of the Merlot.
Serving temperature: 14-16°C
Suggested dish-matching: grilled meat, cold cuts,
boiled meat, “polenta”, “pappardelle” with duck sauce,
“vincisgrassi”, pork with fennel, beans with ork fat, cheese:
typical italian cheeses, such as “scamorza” and “pecorino”.
Suggested glass: Riedel serie Ouverture: Red Wine 408/00.

ROBBIONE
serrapetrona doc
Blend: 100% Vernaccia Nera, dried for a month, according to a traditional method.
Fermentation time: 12 months in 25 hl barrels made from French wood, 9 months in bottles.
Alcohol: 13,5% vol.
Color: intense ruby red with purple reflexes.
Smell: intense and elegant, remembers red fruits as plum, black cherry and red berry, with spicy and balmy notes of vanilla and liquorice in the aftertaste.
Taste: full-bodied aroma balanced by rich and soft tannins. The long and persistent taste brings back in the bouquet a confirmation of the elegant notes of the first smell.
Serving temperature: 16-18°C
Suggested dish-matching: roast meat, red meat, rabbit meat, roast or pan-cooked pigeon in Robbione wine, fillet.
Suggested glass: Riedel serie Bordeaux 416/00.

SOMMO

Blend: 100% Vernaccia Nera, grown in our vineyard in Serrapetrona and dried for four months, according to a traditional method.
Fermentation time: 8 months in barriques, 2 months in bottle.
Alcohol: 13% vol.
Color: intense ruby red with purple reflexes.
Smell: elegant, with fruity and flowery notes and a lighter aroma of plum and black cherry. Spicy notes of mentuccia (quality of aromatic herb similar to mint) and rosemary can
be clearly perceived as well as tobacco and chocolate flavours.
Taste: very elegant; soft and well balanced. In fact sweet sensations are well upheld by its tannic structure.
Serving temperature: 12°C
Suggested dish-matching: desserts.
Suggested glass: Riedel serie Ouverture 408/5. |
